Another remark - you might do to replace the vacuum regulator on the trans. It cuts the pressure way down, which keeps off engagement and reduces torque loss to the pump, until you’ve built vacuum. The rubber is probably crapped at this point, and it can lead to stalls like that. I had some issues balancing idle until I replaced mine.

The original CruiseOMatic like on the ‘58s had a secondary linkage on the throttle and an anti-stall dashpot, so it would kind of goose the throttle if it was stalling...

The FX/MX slight update has the vacuum pressure regulator like on a C4, but is otherwise quite similar. Yours should either have an FX like mine or a C4.

As to fuel pumps... mine also has a fuel pump issue in that the valves are crap. If I’m low-ish on fuel, it takes a moment to prime up.

It’s been said before, but I’ll say it again. The ‘66 is friggin’ sweet! Seeing the distance you drove it on the shakedown run made me realize that big Fords are more reliable for 1966 than they are for 1996.
